This recipe is from my husband. He made this side dish the other night with fresh greens from my garden. It was quick and delicious. If you want a little spice he added sliced pickled jalapeños but if you don’t like spice just omit.
2 sweet potato cubed
1 bunch kale
2 tbsp pickled jalapeño
1 tbsp olive oil
½ cup sliced mushrooms
Heat oil in skillet. Add sweet potatoes and cook for 5-7 minutes. Next add kale, mushrooms and jalapeños cook for an additional 5 minutes. Enjoy!
