With this week’s heat wave upon us, I feel that any heat especially from my oven is not welcomed. With that in mind I have decided to do a few blog post on grill items. When we are thinking of grilling, hot dogs and hamburgers come to mind as does BBQ chicken but what about a roast beef on the grill? Or a pizza? I think the two recipes that I made over the weekend need to be shared. This recipe can be done completely in one foil pan on the grill.
1 3# roastbeef
3 carrots cut into quarters
5 stalks celery cut into quarters
5 potatoes cut into quarters
2 zucchini cut into circles
2 onions cut into quarters
1 tsp salt
1 tsp pepper
1 tsp onion powder
1 tsp thyme
1 tsp oregano
1 tsp basil
2 tbsp oil
½ cup beef broth
Place all Veggies in the foil pan and place roast beef on top. Next drizzle roast beef with olive oil coating the roastbeef. Add all seasoning generously to all sides of the roast beef. Place ¼ cup of beef broth on bottom of tray. Heat grill on medium heat till the temperature reaches above 350 degrees. Place pan in grill and put lid down. This will cook at approximately 15 minutes per pound. Every 15 minutes spoon over some of the broth. Let roast beef rest for 10 minutes than slice and enjoy. No heating up the kitchen required.
