There is one “leftover” item every year around Thanksgiving that I look forward to. Turkey! My dad and I started making this soup when I was younger and it has been a tradition ever since. Cream Of Turkey Soup. I had to alter my recipe to make it gluten free but my dad would vouch for me that it tastes just as good.
Leftover turkey meat
3 stalks celery diced
2 carrots peeled and diced
1 onion diced
¾ cup wild rice mix (the wild rice mix is a must, it adds an extra texture to the soup)
8 cups turkey or chicken broth
1 bay leaf
3 Tbsp cornstarch
In a pot place all of the above ingredients except for cornstarch and rice. Cook on medium Heat for 2 hours. Place rice in and cook for an additional 15-20 minutes. Lastly place 3 Tbsp cornstarch in a bowl and ladle in 3 Tbsp of soup mixture. Whisk well and add back to soup bringing up to a boil. The soup should thicken. Enjoy!
