There are ghosts and little goblins about this time of year. With Halloween drawing near we are not only picking out the perfect costume we are also carving the perfect pumpkin. I know my little ones enjoyed pumpkin carving over the weekend even though they complained about how squishy the “guts” were.
What is nutritious about Halloween? Not a lot but pumpkin seeds do come to mind. My family loves pumpkin seeds and this year we made a batch of cinnamon and sugar pumpkin seeds.
This year as you carve your pumpkin and get your kids ready for a sugar filled night. Roast some pumpkin seeds to balance your week and give your kids a healthier sweet treat.
Pumpkin seeds from pumpkin
1 tbsp sugar
1 tbsp cinnamon
Rinse pumpkin seeds and pat dry. Preheat oven to 375 degrees. Place on cookie sheet sprinkle with cinnamon and sugar. Cook for 15-20 minutes.
