I wanted to continue our first week of back to school meals with another make ahead. Taco night is a staple in our house. Yes, I do a healthier version with ground turkey and I make my own refried beans but my kids love this meal. It’s one meal that I know there is no coaxing to eat. I have never tried making taco meat in the crockpot but figured why not give it a try! So this morning I diced up an onion added some spices and a can of crushed tomatoes and voila! All done. Set it on low for 6-8 hours and we have taco meat.
My husband commented last night that he was so happy that we have been doing all of this meal prep the past 3 weeks. It’s been giving us a lot more time with our kids and a lot less stressers when we get home from work trying to decide what to make with the meat we have defrosted.

Crockpot Taco Meat

1 pound ground turkey
2 cups crushed tomatoes or diced tomatoes
1 onion diced
1 tsp cumin
1 tsp smoked paprika
1 tsp onion powder
1 tsp garlic powder
Salt and pepper
Place all ingredients in crockpot and mix. Place crockpot on low for 6-8 hours or on high for 2-4 hours. Enjoy spending extra time with your kids and an easy cleanup.
