It has been 3 months since our last Weight loss Support Group. It was good to see everyone last night wanting to get back on track. Summer is gone and as the fall weather sets in its time to reflect on maybe what went wrong during these past couple of months or maybe what went right. Everyone agreed that accountability is a big part to weight loss success. We discussed different ways of holding ourselves accountable to our goals. One exercise that we did was to go around the room and everyone had to write down a goal for the month. These consisted on eating 4 vegetables a day to not eating after 7:30pm. As a group we also all had a goal of writing down what we are eating and bringing it to next class. We also sampled a healthy soup I made. Below is the recipe.

Lentil Soup

1 tbsp olive oil or coconut oil
2 carrots Diced
2 stalks celery diced
2 parsnips diced
4 tomatoes cut into quarters
1 bunch kale, leaves only chopped
1 cup lentils, rinsed
1 tsp curry powder
1 tsp cumin
6 cups chicken or vegetable broth
Heat oil in pot. Add all vegetables and saute on low for 5 minutes. Next add lentils, spices and broth and cook for 2 hours on medium heat. Lentils should be soft. Enjoy!
