There are some things that after going gluten free I just miss. Fried chicken cutlets is one of them. Now, before everyone is up in arms about a dietitian recommending anything fried it is something that I have once a year if that! Recently I just wanted a nice chicken cutlet and boy did I get my wish. My husband found Gluten Free 4C Bread Crumbs plain ( I didn’t get the seasoning ones because I like to add my own). He came home and made me a chicken cutlet dinner that had me drooling and wanting more.
What I loved even more about this product is not only was it good fried but on another day I made oven fried chicken and they were equally as delicious. These breadcrumbs are highly recommended. For a recipe on how to flavor and batter the chicken please see below.
2 Cups plain GF bread crumbs
1 tsp salt
1 tsp pepper
2 tsp parsley
2 tsp onion powder
2 tsp garlic powder
3 pounds of skinless, boneless chicken breast
2 eggs
¼ cup milk
⅛ cup hot sauce
Pound out the chicken. Dredge in breadcrumb mixture. Than place in egg wash and back in breadcrumb mix. Place in a preheated 400 degree oven for 25 minutes. Enjoy!
