On a cold dreary day there is nothing better than a bowl of soup. Creamy cheese broccoli soup used to be my favorite but since some food intolerances started to rear their heads I couldn’t enjoy this dish. Today I made a few tweaks to make this soup tummy friendly. I hope those of you who suffer from intolerances enjoy it too!
1 bag frozen broccoli
1 onion diced
2 carrots diced
3 stalks celery diced
8 cups chicken or vegetable broth
2 cups milk
3 tbsp cornstarch
In a pot place broccoli, onion, carrots and celery. Add chicken stock and cook for an hour. In a bowl mix milk and cornstarch. Temper 1 cup of the hot broth into milk mixture. Next add the milk mixture to soup stirring constantly. Cook for an additional 20-30 minutes and enjoy!
