I love chicken Tikka Masala and wanted a quick vegetarian option to have for lunch one day. This recipe, if made with canned chickpeas is quick, easy and delicious. Start to finish less than 30 minutes.
1 onion diced
1 carrot diced
2 stalks celery diced
1 zucchini diced
1 tbsp coconut oil
1 tsp garam masala
1 tsp tandoori spice
1 can chickpeas rinsed
1 can tomato paste
¼ cup plain Greek yogurt
In a skillet heat oil. Next add veggies, chickpeas and spices. Cook for 5 minutes. Add tomato paste. Simmer on low for 10 minutes. Lastly add yogurt. Serve hot and enjoy!
