One pan meals are my favorite dish to prepare and from what I guess most parents favorite. They are easy to clean up and can be on the table in as little as thirty minutes. This one pan dish is a change to one of my mothers dishes. Although she did not use lemon and herb herb of choice was always basil it still reminds me of my childhood. Chicken oreganato is an all in one dish. Throw chicken in with lemon, herbs and potatoes and cook for about 30 minutes and dinner is ready. Throw a quick salad or stemable with it and it is not only an easy cleanup but a crowd pleaser as well.
3 pounds chicken thighs bone in
4 lemons, halved
3 Tbsp oregano
2 Tbsp olive oil
1 tbsp garlic powder
1 tbsp onion powder
4 white potatoes, peeled and quartered
Place chicken and potatoes in a baking dish. Gradually pour olive oil over chicken. Next squeeze the juice of lemons over chicken and potatoes. Lastly sprinkle herbs over potatoes and chicken and bake on 375 degrees for 30 minutes. Enjoy!
