On this stormy day what warms you up more than a bowl of hearty soup! Split pea soup as I knew it growing up was always made with the leftover ham bone. Since my family are not big ham eaters I do not have one on hand but I did have bacon. 3 strips of bacon and split pea soup was made. Delicious! You can easily make this vegan by forgoing the ham and swapping the chicken stock out with vegetable stock.
1 bag split peas
1 onion diced
3 carrots diced
3 stalks celery diced
3 strips bacon
8 cups chicken broth
Cut bacon into pieces place in pot and cook until brown. Remove add vegetables to pot and sauté for 5 minutes. Next add split peas and chicken broth. Cook on medium heat for 2 hours. Garnish with bacon. Hope it warms you!
