With the arrival of spring and the upcoming summer months I can’t stop thinking about all the wonderful fruits and vegetables that will be arriving. Eating the color of the rainbow becomes a little easier this time of year. Zucchinis in their green and yellow bests, tomatoes ripe from the vine. What could be better in the upcoming months to help ourselves stay on track and meet our veggie goals. Daily an average american should consume four servings of vegetables. A serving of vegetables is ½ cup of cooked and 1 cup raw. I say, lets increase this and blow those goals out of the water. Let’s aim for 6 servings a day! Below for this mother’s day weekend treat make mom this healthy three bean salad.
1 can keep deny beans, drained and rinsed
1 can garbanzo beans, drained and rinsed
2 cups green beans blanched
1 onion diced
1 tomato diced
2 cloves garlic, minced
Juice of 1 lime
Zest of 1 lime
½ cup fresh cilantro
2 tbsp olive oil
2 tsp vinegar of choice
Salt and pepper to taste
Add all ingredients to bowl and mix. Let set in refrigerator for 1 hour to cook. Enjoy!
