Spiralized Sweet Potatoes
In this recipe you will need to purchase a good spiralizer. I recommend one that can be placed on the counter, over the hand held variety. I never made spiralized sweet potatoes before and was hesitant especially when I am using this for meal prep but it was delicious and easy to make. Although this recipe is not a carb free recipe it is a healthier alternative to having just plain pasta.
1 cup of spiralized sweet potatoes has 114 calories, 27 grams of carbohydrates and 4 grams of fiber. 1 Cup of plain pasta contains 220 calories, 43 grams of carbs and 3 grams of fiber. These are drastic numbers when we are looking at calories and carbohydrate counts. To add a bonus to this dish it is naturally gluten free! In my family this dish is a triple win being quick, healthy, and gluten free.
2 Sweet Potatoes, spiralized
1 tsp olive oil
Salt and pepper
1 Cup Marinara sauce
Spiralize sweet potatoes. Place on baking tray, drizzle olive oil and sprinkle salt and pepper over. Place in a 350 degree preheated oven for 10-15 minutes. Remove from oven and top with your favorite marinara sauce.
