I think my favorite time of year is being able to go outside and know that spring is right around the corner. The smells of spring have been everywhere these past two weeks and although I am writing this post and today it’s raining and 46 degrees I know that warmer weather is on its way. My favorite part of Spring is of course gardening ( I love to garden) hopefully in my future post you can see some of my work. I also love cooking outdoors and grilling up some vegetables. Shish Kabobs are one of my favorites and what I grilled up today on this not so spring day in hopes of spring to come is a healthy and delicious beef and shrimp kabobs. My dad actually while home watching my kids (we gotta love the grandparents for pitching in) threw together a quick marinade for these and we grilled them with some fresh veggies when I got home. Enjoy!
1 1/2 pounds stew meat, chicken breast or shrimp or a combination of any
½ cup low sodium soy sauce
3 red peppers cut into chunks
3 onions cut into chunks
1 cup cherry tomatoes
1 pkg mushrooms halved
1 orange pepper
3 cloves garlic minced
2 TBSP freshly grated ginger
2 Tbsp orange zest
Juice of one orange
1 tsp Pepper
If out like it spicy add some cayenne pepper or red pepper flakes
Place soy sauce ginger, orange zest, orange juice, garlic and pepper in a bowl and whisk together. Next in a ziplock bag place meat mushrooms and marinade for 4 hours or overnight. Take skewers and place meat, pepper, onion, tomatoes, mushroom on each skewer. Keep alternating until all ingredients are used. Cook on a preheated grill for about 15 minutes.
Place marinade in a pot and boil. This could be used for additional sauce.
