I feel that I have been complaining a lot about stress lately and for that I am sorry. I am changing my tune and trying to focus especially around the holidays to what I am thankful for. Today I am thankful that my dad is helping with my kids and my husband and I get to come home from work to a home cooked meal. Turkey Asian Lettuce Wraps. YUM!! My Favorite. 1 head lettuce (I use iceberg)
1 pound ground turkey
3 tbsp tamari
1 can water chestnuts
1 can bamboo shoots
3 stalks celery cut on an angle
2 carrots cut on an angle
1 cup spinach
1 onion sliced thin
2 tsp fresh ginger
3 cloves garlic minced
Heat Wok. It is very important to heat your wok to the appropriate temperature. As well as not to overcrowd the pan. If not you will steam the food you are cooking. Heat oil (I used coconut oil).Place meat in pan and brown. Next add veggies as well as ginger and tamari. Cook for an additional 3-5 minutes. Serve over rice noodles with garlic chili sauce on the side.
