A lot of patients that I have encountered over the past year are suffering from IBS or IBS like symptoms. These symptoms can affect their lives in a magnitude of ways. Some need to know where all bathrooms are at all times, others need to keep extra clothes with them at work or in the car.While others may be asked, “When are you due?”(no I am not expecting but whatever I just ate made me look this way) Whatever the reason it is important to know you are not alone. Many people suffer from this disease and feel that there is no help! Over the past 10 years there has been some great advances in our research on the impact of our diet and IBS. IBS approved Quinoa Salad
1 cup quinoa
1 English Cucumber, seeded and diced
2 scallions diced
1/4 C. Fresh Cilantro
2 Tbsp Fresh Basil
Dressing
2 Tbsp olive oil
2 Tbsp lemon juice
1 tsp sugar
Salt and pepper
Boil chicken stock, add quinoa and cook for 12 minutes.While quinoa is cooking whick ingredients to dressing in a bowl. Strain and rinse quinoa well with cold water. next add cucubers, scallions, cilantro and basil. Drizzle dressing over quinoa and toss. Enjoy!
