Gluten is a protein found in wheat, rye, and barley.  If you are diagnosed with celiac disease, it is especially important to avoid gluten. Gluten almost acts as a “poison” for people with celiac disease.
Whether you follow a gluten free diet because you have celiac disease, or gluten intolerance or it is just a matter of personal preference, following gluten free diet is more than just avoiding wheat.  Reading food labels become especially important with a gluten free diet because you will find hidden ingredients that you may think don’t contain gluten. Becoming familiar with things that contain gluten will help make following a gluten free diet easier. Often times the gluten is replaced with extra fat or sugar in gluten free products. Always remember to read your ingredients list!
