The snow is coming down and I have one thought on my mind. Cream of Broccoli Soup with a healthy spin. One of my favorite items when i was a kid was cream of broccoli soup put it in a bread bowl. As I get older and calories caught up with me that became less of a favorite for my waist line. Now i always look to take a comfort food and put a healthy twist on it. Cream of Broccoli soup is one of those that can be delicious when we eat it but quickly add up in calories. Try this healthy version of the soup it is sure to please.
Healthy Cream of Broccoli Soup
1 head fresh broccoli, chopped
1 onion, diced
1 carrot, diced
2 stalks celery, diced
8 cups chicken broth
2 cups milk
2 tbsp cornstarch
Salt and pepper to taste
1 tbsp coconut oil
In a dutch oven heat oil. Add broccoli, carrots, onion and celery and saute for 5 minutes. Next add chicken broth and cook for 1 hr on medium heat. With an immersion blender or blender puree soup. Next, temper the milk in by slowly combining milk and soup. Take ¼ cup of the soup and mix in a bowl with the cornstarch. Add to soup to thicken stir and cook for 5 minutes. Lastly add salt and pepper to taste. Topped with some cheddar cheese and enjoy!
