Happy memorial day everyone! I hope everyone had a relaxing holiday and stayed cool in the heat! At our BBQ this weekend we had the usual pasta salads, which in the past I was the first to scoop a heaping amount on my plate. Now being gluten free my options are a little more limited. At first I couldn’t think of an alterantive other than potato salad to serve. Then I thought why not a chickpea salad, and instead of just chickpeas why not add mango and jalapenos. Well, this dish was delicious and will definitely have a regular occurrence at our BBQs this year.
Jalapeno Mango Chickpea Salad
1 mango diced
1 jalapeno seeded and diced
2 cans chickpeas, drained and rinsed
2 tsp cumin
2 tsp turmeric
2 Tbsp olive oil
1 tbsp apple cider vinegar
Mix all ingredients in bowl and chill before serving.
