Holidays are behind us and now what to do with all these leftovers. If anyone is like my family around the holidays there is always a ham. I never did much with ham in the past. I would use the ham bone and make pea soup, ham sandwiches, ham over a salad but that was the extent of it. This time around I tried a new recipe that was a success. In it I put the leftover ham as well as the pea greens from the CSA! Ever wonder what a pea green looks like? Here is a pic.
Ham Soup
Leftover ham
2 cans small white beans
1 onion diced
2 stalks celery diced
2 carrots diced
1 handful pea greens
8 cups chicken or vegetable broth
In a large pot place all ingredients. Cook for 3 hours on medium heat. Enjoy!
