It seems that for the past two weeks I have been on a sweet kick trying to satisfy this craving with healthier versions. This weekend was my son’s first birthday and yes I let him eat cake. Well…I think he got more on him and the floor rather than in his mouth. I didn’t want to buy or make a whole GF cake especially since the majority of people attending only few were GF. So, i decided to make brownies for those of us who need to be GF but also want a sweet treat from time to time. In my opinion these were delicious and hit the spot. I hope you enjoy them as much as I did.
2 bananas, ripe
2 eggs
1 cup dark chocolate cocoa powder
½ cup dark chocolate chips
1 tsp vanilla
1 tsp baking powder
½ tsp baking soda
2 tbsp coconut milk
¼ cup sugar or 2 tbsp maple syrup or honey (I used sugar)
½ cup pecans
Place all ingredients except for pecans in a blender. Pulse until well combined. Next transfer to bowl and fold in pecans. Grease a 9×9 baking dish and bake on 350 degrees for 30 minutes.
