I was going through my fridge the other night and waiting for my sister in law to come over for our weekly Gilmore Girls preview. I wanted to make a quick and easy dessert that was somewhat healthy as well as gluten and dairy free. Boy was I stumped, I had no chocolate (I am never letting that happen again!) lol. And my fridge really did not have a lot of options except for a few bananas that had seen better days. I did have some coconut oil as well as sugar and cinnamon so I thought why not a healthier take on a kinda “flambe”. It cooked up in less than 5 minutes and of course it would go great over ice cream.
Healthy Banana Flambe
4 ripe bananas slices
1 tbsp coconut oil
¼ cup sugar ( i found it a little sweet so if you want to add less to cut calories should be fine)
2 tsp cinnamon
Heat oil in a sauce pan, add bananas. Cook for 2 minutes add sugar and cinnamon. Cook for 5 minutes. Serve hot.
