I had an over abundance of strawberries this week in my fridge and decided to utilize them in a dessert. I wanted something that would go over ice cream and was simple to make. My niece helped me with this and it was quick, easy and delicious.
4 Cups Strawberries
3 Tablespoons maple syrup (or 2 tbsp sugar)
1 tsp vanilla extract
Zest of a lemon
Crumb topping
1 Cup Almond Flour
3 Tbsp Coconut oil
1 Tbsp maple syrup
Toss strawberry ingredients in a bowl. Place in a baking dish. In a separate bowl add ingredients for crumb topping and sprinkle over strawberries. Cook on 375 for 20 minutes. Serve over ice cream or yogurt.
