Another great lecture today at ADAMS Fairacre farms in Wappingers Falls. We had a great turnout discussing the low FODMAP diet. Everyone was amazed that a salsa recipe could taste so good, and how buffalo chicken meatballs could be low FODMAP.
We learned the basics of the Low FODMAP diet, and different cooking tips to help adhere to low FODMAP. Swap out tips were discussed as well as how to be a FODMAP detective when reading food labels.
Below are recipes that were demoed at the event.
¼ cup fresh chives, chopped
1 bunch green onions (scallions) — green part only, diced
¼ cup dried parsley
¼ cup fresh cilantro, chopped (optional)
½ cup diced banana peppers
1 can large diced tomatoes **
7 ounces jar of Cento Roasted Red Peppers , diced and liquid ***
7 ounce can chopped green chilies
Juice of 1 lime
1 teaspoon chili powder
Instructions
In a bowl place all ingredients mix well.
Buffalo Chicken Meatballs
1 pound Ground Chicken Breast
4 Tbsp Butter
⅓ Cup Crystal’s Hot Sauce or texas pete
⅔ cup Glutino Gluten Free Bread Crumbs
1 Egg
1 Tbsp parsley chopped
In a mixing bowl combine ground chicken, glutino GF breadcrumbs, egg, and pas\rsley. Mix well than shape into little balls. Heat Skillet and oil, next add meatballs. After meatballs are browned remove and add hot sauce, and butter. Cook until mixture is bubbling stirring constantly. Add meatballs back to skillet with sauce and cook until meatballs are cooked through. Enjoy with dices of celery on top.
